I haven't posted in a while because I've been busy. It's not an excuse, it's the truth. September always proves to be the busiest months for me at the theatre. Although I've been working everyday this weekend, it was rather stress-free. I actually had a chance to take the whole day today off, so I took it off. I was debating what to make for dinner and I decided that it, now being Autumn, is perfect soup weather.
If you look at my recipe blog to the right (there are only three recipes, I know) you'll see that I'm all about one pot dinners. I took my "Fran Landis' turkey chili" recipe and matched it up with my corn chowder recipe. Jamie and I haven't sat down to eat yet but I can already tell it's going to be yummy. All but two of the ingredients are Wegmans brand and, paired with a salad, the whole meal cost about $15.
I'll call it my SOUP WEATHER SOUP:
Ingredients:
- 1 Tbsp. olive oil
- 1 bag, Wegmans Cleaned n' Cut Minestrone Soup vegetables (or cut your own if you have the time: onions, carrots, potatoes, celery, zucchini)
- 1 14.5oz. can, black beans
- 1 14.5 oz. can, great northern (white) beans
- 1 16 oz. bottle, Wegmans roasted red pepper salsa
- 1 9.5 oz. jar, Nances corn relish
- 1 package (tube), Jimmy Dean's regular bulk sausage, cooked
Cook vegetables in oil for 2 minutes over high heat in soup pot. Add all other ingredients. Bring to boil. Simmer for an hour or so. Eat.
